Ingredients
  

For the Salad

  • 8 ounces rice vermicelli noodles
  • 1 cup shredded purple cabbage
  • 1 cup julienned carrots
  • 1 cucumber, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup shelled edamame, cooked
  • 3 green onions, sliced
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh mint leaves
  • ¼ cup roasted peanuts, chopped
  • 1 tablespoon toasted sesame seeds
  • Lime wedges, for serving

For the Spicy Dressing

  • 3 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons sriracha
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon chili garlic sauce (optional for extra heat)
  • 2 tablespoons water, if needed to thin the dressing

Instructions
 

  • Cook the rice noodles according to the package directions until just tender.
  • Drain and rinse the noodles under cold running water to cool them completely.
  • In a bowl, whisk together the soy sauce, lime juice, rice vinegar, sesame oil, honey, sriracha, garlic, ginger, and chili garlic sauce until well combined.
  • If the dressing is too thick, add a little water until it reaches a pourable consistency.
  • Place the cooled noodles in a large serving bowl.
  • Add the cabbage, carrots, cucumber, bell pepper, edamame, green onions, cilantro, and mint.
  • Pour the spicy dressing over the salad and toss thoroughly until everything is evenly coated.
  • Garnish with roasted peanuts, toasted sesame seeds, and fresh lime wedges. Serve immediately or chill for 20 minutes before serving.
