Ingredients
  

For the Sushi Rice

  • 2 cups Japanese short-grain sushi rice
  • 2¼ cups water
  • ¼ cup rice vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt

For the Spicy Salmon Filling

  • 300 g (10–11 oz) salmon
  • 3 tablespoons mayonnaise
  • 1–2 tablespoons sriracha
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 tablespoon finely chopped green onion
  • ½ teaspoon lime juice
  • ½ teaspoon sesame seeds

For the Sushi Rolls

  • 5–6 sheets nori
  • 1 ripe avocado, sliced into thin strips
  • 1 small cucumber, cut into thin matchsticks
  • 2 tablespoons sesame seeds
  • 2 tablespoons finely sliced green onions

For Serving

  • Soy sauce
  • Pickled ginger
  • Extra spicy mayo

Instructions
 

Rinse the Sushi Rice

  • Place the sushi rice in a bowl.
    Cover with cold water and gently swirl the rice with your fingers.
    Drain the cloudy water.
    Repeat several times until the water becomes mostly clear.
    Allow the rice to drain for approximately 10–15 minutes.

Cook the Sushi Rice

  • Transfer the rinsed rice and water to a rice cooker or saucepan.
    Cook according to the rice package instructions.
    Once cooked, allow the rice to rest for about 10 minutes with the lid closed.
    The rice should be tender and sticky but not mushy.

Prepare the Sushi Seasoning

  • Combine rice vinegar, sugar, and salt in a small saucepan.
    Warm gently until the sugar and salt dissolve.
    Do not boil.
    Allow the mixture to cool slightly.

Season the Rice

  • Transfer the cooked rice to a wide, shallow bowl.
    Pour the seasoned vinegar over the rice.
    Gently fold the vinegar into the rice using a spatula or rice paddle.
    Use cutting motions rather than vigorous stirring.
    Allow the rice to cool to room temperature.

Prepare the Salmon

  • For a cooked salmon version, bake or pan-cook the salmon until completely cooked, then allow it to cool before flaking.
    For a raw version, only use salmon specifically sold and handled for raw consumption and keep it properly refrigerated.
    Finely chop the salmon into small pieces.

Make the Spicy Salmon Filling

  • Place the salmon in a bowl.
    Add mayonnaise, sriracha, sesame oil, soy sauce, rice vinegar, lime juice, green onion, and sesame seeds.
    Mix gently until the ingredients are evenly combined.
    Taste and adjust the spice level.

Prepare the Vegetables

  • Cut the cucumber into thin matchsticks.
    Slice the avocado into long, thin strips.
    Keep the pieces relatively uniform to make rolling easier.

Prepare the Bamboo Mat

  • Place a bamboo sushi mat on a clean work surface.
    Cover it with plastic wrap if desired.
    Place one sheet of nori on the mat with the rough side facing upward.

Spread the Rice

  • Wet your fingers lightly with water.
    Take a portion of sushi rice and spread it evenly over the nori.
    Leave approximately 1 inch of nori uncovered along the top edge.
    Do not press the rice too firmly.

Add the Spicy Salmon

  • Place a narrow line of spicy salmon mixture across the lower third of the rice.
    Keep the filling compact so the roll remains easy to close.

Add Avocado and Cucumber

  • Place avocado strips and cucumber matchsticks alongside the salmon.
    Avoid overfilling the roll.
    A moderate amount of filling will create a tighter and cleaner roll.

Roll the Maki

  • Lift the bamboo mat closest to you and begin rolling the nori over the filling.
    Use your fingers to hold the filling in place.
    Apply gentle but firm pressure while rolling.
    Continue until the roll is completely closed.
    Moisten the exposed edge of nori with a little water to seal it.

Shape the Roll

  • Use the bamboo mat to gently compress and shape the roll into a neat cylinder.
    Do not squeeze too tightly because the rice can become dense and the filling may escape.

Slice the Sushi

  • Use a very sharp knife.
    Lightly wet the blade.
    Cut the roll in half, then cut each half into three or four pieces.
    Clean and dampen the knife between cuts if necessary.

Garnish

  • Arrange the sushi pieces on a serving plate.
    Sprinkle with sesame seeds and sliced green onions.
    Drizzle with extra spicy mayo if desired.

Serve

  • Serve immediately with soy sauce, pickled ginger, and wasabi.
    A small squeeze of lime can add a refreshing finishing touch.

  • Raw salmon safety: If using raw salmon, purchase seafood specifically intended for raw consumption from a reputable supplier.
