Ingredients
  

  • 2 packs ramen noodles (discard seasoning packets)
  • 1/2 pound shrimp, peeled and deveined
  • 1 tbsp sesame oil
  • 1 tsp ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp sriracha (adjust to taste)
  • 4 cup s chicken or vegetable broth
  • 1 tsp chili flakes (optional for extra heat)
  • 1 tbsp miso paste (optional for depth of flavor)
  • 1/2 tsp brown sugar
  • 1/2 cup shredded carrots
  • 1/2 cup sliced mushrooms
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro (for garnish)
  • 1 boiled egg (optional, sliced in half)
  • 1 tbsp lime juice

Instructions
 

  • Prepare the broth: In a pot over medium heat, heat sesame oil and sauté garlic and ginger until fragrant.
  • Add liquids: Stir in soy sauce, sriracha, broth, miso paste, chili flakes, and brown sugar. Let simmer for 5 minutes.
  • Cook the shrimp: Add the shrimp and cook until they turn pink, about 3 minutes.
  • Add vegetables: Stir in carrots and mushrooms, cooking for another 3 minutes.
  • Cook the noodles: Add ramen noodles and cook according to package instructions.
  • Final touches: Remove from heat and stir in lime juice. Taste and adjust seasoning if necessary.
  • Serve: Divide into bowls, top with green onions, cilantro, and a boiled egg if desired. Enjoy hot!

Notes

  • Adjust spice levels by increasing or reducing sriracha and chili flakes.
  • Substitute shrimp with chicken or tofu for a different protein option.
  • Store leftovers separately to prevent noodles from getting too soft.
