- 2 tablespoons oil
- 1 tablespoon fresh ginger, grated
- 3 cloves garlic, minced
- 1–2 Thai red chilies, sliced (adjust to taste)
- 1 medium onion, sliced
- 1 lb (450 g) chicken breast or thighs, sliced
- 5 cups chicken broth
- 1 cup coconut milk
- 1 tablespoon fish sauce (or soy sauce)
- 1 teaspoon brown sugar
- Juice of 1 lime
- ½ teaspoon black pepper
Heat oil in a pot over medium heat.
Add ginger, garlic, chilies, and lemongrass; sauté until fragrant.
Add onion and cook until softened.
Stir in chicken slices and cook lightly.
Pour in chicken broth and simmer for 15 minutes.
Add coconut milk, fish sauce, and sugar.
Simmer gently for 5–7 minutes.
