Ingredients
  

  • 2 tablespoons oil
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 1–2 Thai red chilies, sliced (adjust to taste)
  • 1 medium onion, sliced
  • 1 lb (450 g) chicken breast or thighs, sliced
  • 5 cups chicken broth
  • 1 cup coconut milk
  • 1 tablespoon fish sauce (or soy sauce)
  • 1 teaspoon brown sugar
  • Juice of 1 lime
  • ½ teaspoon black pepper

Instructions
 

  • Heat oil in a pot over medium heat.
  • Add ginger, garlic, chilies, and lemongrass; sauté until fragrant.
  • Add onion and cook until softened.
  • Stir in chicken slices and cook lightly.
  • Pour in chicken broth and simmer for 15 minutes.
  • Add coconut milk, fish sauce, and sugar.
  • Simmer gently for 5–7 minutes.
  • Garnish with cilantro and serve hot.
