- 3 cups cooked shredded turkey
- 1 onion, chopped
- 1 cup celery, diced
- 1 cup green bell pepper, diced
- 4 cloves garlic, minced
- ½ cup all-purpose flour
- ½ cup vegetable oil
- 6 cups turkey or chicken broth
- 2 tbsp Cajun seasoning
- 1 tsp paprika
- ½ tsp cayenne pepper (adjust to spice level)
- 1 tsp dried thyme
- 2 bay leaves
- Cooked rice for serving
- Green onions for garnish
Heat oil in a large pot over medium heat. Add flour and whisk continuously to form a dark brown roux.
Add onions, celery, and bell peppers. Cook until softened.
Stir in garlic and all spices. Mix well.
Pour in broth slowly while stirring to avoid lumps.
Add shredded turkey and bay leaves. Simmer for 45–60 minutes.
Adjust seasoning if needed and remove bay leaves.
Serve hot over cooked rice. Garnish with green onions.
