Ingredients
  

  • 3 cups cooked shredded turkey
  • 1 onion, chopped
  • 1 cup celery, diced
  • 1 cup green bell pepper, diced
  • 4 cloves garlic, minced
  • ½ cup all-purpose flour
  • ½ cup vegetable oil
  • 6 cups turkey or chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • ½ tsp cayenne pepper (adjust to spice level)
  • 1 tsp dried thyme
  • 2 bay leaves
  • Cooked rice for serving
  • Green onions for garnish

Instructions
 

  • Heat oil in a large pot over medium heat. Add flour and whisk continuously to form a dark brown roux.
  • Add onions, celery, and bell peppers. Cook until softened.
  • Stir in garlic and all spices. Mix well.
  • Pour in broth slowly while stirring to avoid lumps.
  • Add shredded turkey and bay leaves. Simmer for 45–60 minutes.
  • Adjust seasoning if needed and remove bay leaves.
  • Serve hot over cooked rice. Garnish with green onions.

Notes

  • Use darker roux for bolder flavour.
  • Leftover roasted turkey adds extra smokiness.
  • Add okra if you prefer a thicker gumbo.
  • Substitute chicken if turkey is unavailable.
  • Gumbo tastes even better the next day.
