Italian spiedini is a skewer-based dish with marinated meat and seasoned breadcrumbs, grilled to golden perfection.

Ingredients
  

  • 1 lb beef, chicken, or pork (cut into bite-sized cubes)
  • ¾ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ salt
  • ½ tsp black pepper
  • ½ cup olive oil (divided)
  • 2 tbsp lemon juice
  • Wooden or metal skewers (soaked if wooden)
  • Optional: cherry tomatoes, bell pepper chunks, or onions for additional skewering

Instructions
 

  • Prepare the marinade:
    In a bowl, mix 2 tbsp olive oil and lemon juice. Add the meat cubes and toss to coat. Let marinate for 10 minutes.
  • Make the breadcrumb mixture:
    In a separate bowl, combine breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, and black pepper.
  • Coat the meat:
    Remove the meat from the marinade and coat each piece in the breadcrumb mixture, pressing lightly to adhere.
  • Assemble the skewers:
    Alternate meat cubes with optional vegetables (e.g., cherry tomatoes, bell peppers) on the skewers.
  • Grill the spiedini:
    Preheat the grill or a grill pan to medium-high heat. Brush the skewers with the remaining olive oil and grill for 3-4 minutes per side, or until the meat is cooked through and golden.
  • Serve:
    Arrange the spiedini on a platter and garnish with additional parsley and a squeeze of lemon juice if desired.

Notes

  • For extra flavor, marinate the meat for up to 1 hour.
  • Soak wooden skewers in water for 30 minutes before use to prevent burning.
