Ingredients
  

  • 1 sheet puff pastry, thawed
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach (or frozen, thawed and drained)
  • ½ cup ricotta cheese
  • ½ cup feta cheese, crumbled
  • 1 egg, lightly beaten
  • Salt and pepper, to taste
  • 1 tsp dried oregano
  • 1 egg (for egg wash)

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Heat olive oil in a pan. Sauté onion and garlic until soft.
  • Add spinach and cook until wilted. Remove from heat and cool.
  • Mix ricotta, feta, beaten egg, salt, pepper, and oregano in a bowl. Stir in the cooled spinach mixture.
  • Roll out puff pastry and cut into rectangles or squares.
  • Spoon spinach filling along one edge, roll tightly, and seal the edge.
  • Brush the top with egg wash for a golden finish.
  • Bake for 20–25 minutes until puffed and golden brown. Serve warm.

Notes

  • Use thawed puff pastry for best flakiness.
  • Make sure the spinach mixture is cool before filling.
  • Avoid overstuffing to prevent leaks during baking.
  • You can freeze unbaked rolls and bake directly from frozen.
  • Serve with garlic yogurt or tomato dip for extra flavour.
