- 4 flounder fillets
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, finely diced
- ½ cup crumbled feta cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Juice of 1 lemon
- ½ tsp dried oregano
- Salt and black pepper, to taste
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Heat olive oil in a skillet. Sauté garlic and mushrooms until tender. Add spinach and cook until wilted. Remove from heat and stir in feta.
Season flounder fillets with salt, pepper, and oregano. Place filling on each fillet and roll tightly. Secure with toothpicks if needed.
Place rolls seam-side down in the baking dish. Drizzle with olive oil and lemon juice.
Bake for 20–25 minutes until fish flakes easily with a fork. Serve warm.
