For the Casserole
- 3 medium zucchini, sliced
- 3 medium yellow squash, sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- ½ cup sour cream
- ½ cup mayonnaise
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and black pepper, to taste
For the Topping
- 1 cup buttery crackers, crushed (or panko breadcrumbs)
- 2 tablespoons unsalted butter, melted
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (optional)
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Heat the olive oil in a large skillet over medium heat. Sauté the onion until softened, about 3–4 minutes.
