For the Tart Shells
- 1½ cups all-purpose flour
- ½ cup unsalted butter, chilled and cubed
- ¼ cup powdered sugar
- 1 egg yolk
- 2 tablespoons cold water
- ¼ teaspoon salt
For the Vanilla Pastry Cream
- 2 cups whole milk
- ½ cup granulated sugar
- 3 egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
Fruit Topping
- 1 cup fresh strawberries, sliced
- 2 kiwis, peeled and sliced
Optional Glaze
- 2 tablespoons apricot jam
- 1 tablespoon warm water
Mix flour, powdered sugar, and salt in a bowl. Cut in the chilled butter until the mixture resembles coarse crumbs. Add the egg yolk and cold water, mixing until a dough forms. Wrap and chill for 30 minutes.
Preheat the oven to 375°F (190°C). Roll out the dough and line eight mini tart pans. Prick the bases with a fork and bake for 18–20 minutes, or until lightly golden. Cool completely.
Heat the milk in a saucepan until just steaming. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch. Slowly add the warm milk while whisking continuously. Return the mixture to the saucepan and cook over medium heat until thickened. Remove from the heat and stir in the vanilla extract and butter. Cover with plastic wrap touching the surface and chill completely.
Spoon or pipe the chilled pastry cream evenly into the cooled tart shells.
Decorate each tartlet with alternating slices of strawberries and kiwi in a circular pattern or your preferred design.
Warm the apricot jam with water until smooth, then lightly brush it over the fruit for a glossy finish.
Refrigerate the tartlets for at least 30 minutes before serving.
Serve chilled and garnish with fresh mint leaves if desired.
