  • 1 pre-baked 9-inch pie crust (homemade or store-bought)
  • 1 cup water
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 package (3 oz) strawberry gelatin
  • 4 cups fresh strawberries, hulled and halved
  • Whipped cream for topping (optional)

Instructions
 

  • Step 1: Prepare the Glaze
    In a saucepan, combine water, sugar, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens and turns clear.
  • Step 2: Add Flavor
    Remove the pan from heat. Stir in the lemon juice and strawberry gelatin until fully dissolved. Allow the mixture to cool for about 10 minutes.
  • Step 3: Assemble the Pie
    Arrange fresh strawberries evenly in the cooled pie crust. Pour the glaze over the strawberries, making sure they are well coated.
  • Step 4: Chill and Set
    Refrigerate the pie for at least 3 hours or until the glaze is firm. This allows the flavours to meld and the texture to set.
  • Step 5: Serve and Enjoy
