Ingredients

  • 1 baked 9-inch pie crust
  • 1 egg wash (optional for a golden crust)

For the Filling

  • 5 cups fresh strawberries, washed and hulled
  • 1 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 cup water
  • 1 package (3 oz) strawberry gelatin
  • 1 tbsp lemon juice

For Garnish

  • Whipped cream
  • Fresh strawberries
  • Mint leaves (optional)

Instructions
 

  • Bake the pie crust according to package directions or your favorite homemade recipe. Allow it to cool completely.
  • Set aside about 4 cups of whole strawberries. Mash the remaining strawberries to create approximately 1 cup of mashed berries.
  • In a saucepan, combine mashed strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly until thickened.
  • Remove from heat and stir in strawberry gelatin and lemon juice until completely dissolved.
  • Allow the glaze to cool for 15–20 minutes, stirring occasionally.
  • Arrange the whole strawberries evenly inside the cooled pie crust.
  • Pour the strawberry glaze over the berries, ensuring they are evenly coated.
  • Refrigerate the pie for at least 3 hours or until fully set.
  • Top with whipped cream and additional fresh strawberries before serving.
  • Slice and serve chilled.
