For the Pretzel Crust:
- 2 cups crushed pretzels
- ¾ cup melted butter
- 3 tablespoons sugar
For the Cream Cheese Layer:
- 8 oz cream cheese, softened
- ¾ cup sugar
- 8 oz whipped topping (Cool Whip), thawed
For the Strawberry Layer:
- 6 oz strawberry gelatin (Jell-O)
- 2 cups boiling water
- 2 cups sliced fresh strawberries
Prepare the crust: Preheat oven to 350°F (175°C). Combine crushed pretzels, melted butter, and sugar. Press into a 9x13-inch baking dish. Bake for 10 minutes, then cool completely.
Make the cream layer: Beat cream cheese and sugar until smooth. Fold in whipped topping. Spread over cooled pretzel crust, ensuring the edges are sealed to prevent Jell-O from leaking through.
Prepare the strawberry layer: Dissolve gelatin in boiling water. Stir in sliced strawberries. Cool until the mixture begins to thicken slightly.
Assemble: Pour the strawberry mixture over the cream layer. Chill in the refrigerator for at least 4 hours, or until firm.
Serve: Slice into squares and serve chilled.
- Always let the pretzel crust cool completely before adding the cream layer.
- Ensure the cream layer completely seals the crust to prevent sogginess.
- Fresh strawberries offer the best flavour and texture.
- Use full-fat cream cheese for a richer taste.
- Refrigerate leftovers — it tastes even better the next day.
