Ingredients
  

  • 4 slices soft white sandwich bread
  • 8–10 fresh strawberries
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • 1–2 teaspoons strawberry jam, optional

Instructions
 

  • Wash the strawberries gently and pat them completely dry with paper towels. Remove the green tops. Choose strawberries that are similar in size so the sandwich will have an even appearance.
  • Add cold heavy whipping cream, powdered sugar, and vanilla extract to a chilled mixing bowl. Whip until the cream becomes thick and holds firm peaks. Avoid over-whipping, as the cream can become grainy.
  • Place the bread slices on a clean work surface. Trim the crusts if you want a traditional Japanese fruit-sandwich appearance. Keep the bread soft and avoid flattening it.
  • Spread a generous layer of whipped cream over each slice of bread. Make sure the cream reaches close to the edges.
  • For an attractive cross-section, imagine where you will cut the sandwich. Arrange whole strawberries in a straight line or carefully position them so the cut surface will reveal a beautiful strawberry pattern.
  • Add another layer of whipped cream over and around the strawberries. Fill any gaps so the fruit is securely surrounded by cream.
  • Place the second slice of bread on top and gently press it down. Do not squeeze too hard because the strawberries can release juice and make the bread soggy.
  • Wrap each sandwich tightly in plastic wrap and refrigerate for 30–60 minutes. For the most attractive presentation, mark the direction in which you want to cut the sandwich before chilling. Use a sharp knife to cut it cleanly in half.
  • Serve immediately while the bread is soft and the cream is fresh.

  • Use very soft, fresh white bread for the best texture.
  • Japanese milk bread or shokupan is ideal when available.
  • Strawberries should be completely dry before assembling.
  • Similar-sized strawberries create a more attractive cross-section.
