Ingredients
  

For the Strudel Dough

  • 2 cups (250 g) all-purpose flour
  • ¼ teaspoon salt
  • ¾ cup (180 ml) lukewarm water
  • 1 tablespoon vegetable oil or neutral oil
  • 1 teaspoon apple cider vinegar or lemon juice
  • 1 teaspoon additional oil, for coating the dough

  • All-purpose flour, for the work surface
  • Melted butter or oil, for brushing if required by your filling or recipe

Instructions
 

  • Place the flour and salt in a large mixing bowl. Whisk or stir briefly to distribute the salt evenly.
  • Mix with a wooden spoon or your hands until a soft, slightly sticky dough forms.
  • Transfer the dough to a lightly floured work surface.
  • The dough should feel supple rather than stiff.
  • If it stretches without immediately tearing, the gluten has developed sufficiently.
  • Place it in a bowl and cover tightly with plastic wrap or an inverted bowl.
  • Allow the dough to rest at room temperature for at least 1 hour.
  • Spread a clean kitchen towel over a large table or work surface and lightly dust it with flour.
  • Place the rested dough on the prepared towel.
  • Gently flatten it first with your hands, then carefully stretch it from the center outward.
  • Trim away any unusually thick edges if necessary.
  • For apple strudel, breadcrumbs are often scattered over the dough before the apple filling is added to help absorb excess moisture.
  • Transfer the shaped strudel to a baking tray, brush with melted butter or oil, and bake according to your chosen strudel recipe until beautifully golden.

Notes

  • Use lukewarm water: Very cold water makes the dough harder to develop, while excessively hot water can affect the dough.
  • Kneading matters: Proper kneading develops the gluten necessary for stretching.
