Ingredients
  

For the Potatoes

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • Salt, to taste

For the Filling

  • Potato flesh from baked potatoes
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • ¼ cup sour cream
  • 2 tablespoons milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped green onions

Instructions
 

  • Wash and dry the potatoes thoroughly.
  • Rub with olive oil and sprinkle generously with salt.
  • Preheat the air fryer to 400°F (200°C).
  • Air fry the potatoes for 35–40 minutes, turning halfway through until tender.
  • Allow the potatoes to cool slightly.
  • Slice each potato in half lengthwise.
  • Scoop out most of the potato flesh, leaving a thin layer attached to the skin.
  • Mash the scooped potato with butter, sour cream, milk, garlic powder, onion powder, salt, pepper, cheddar cheese, green onions, and bacon.
  • Spoon the mixture back into the potato skins.
  • Top with additional shredded cheese.
  • Return stuffed potatoes to the air fryer.
  • Cook for 6–8 minutes until the cheese is melted and bubbly.
  • Garnish with parsley, green onions, and sour cream before serving.
