Ingredients
  

  • 4 large green bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 cup diced tomatoes (canned or fresh)
  • ½ cup chopped onion
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tbsp olive oil
  • ½ cup tomato sauce (for topping)

Instructions
 

  • Prepare the Peppers
    Cut off the tops, remove seeds, and rinse the peppers. Boil them for 5 minutes to soften slightly. Drain and set aside.
  • Cook the Filling
    In a skillet, heat olive oil. Add onions and garlic, cook until soft. Add ground meat, cook until browned. Stir in tomatoes, rice, and seasoning. Let simmer for 5 minutes
  • Stuff the Peppers
    Fill each pepper with the meat and rice mixture. Place in a baking dish and spoon tomato sauce over the tops.
  • Bake and Finish
    Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil, top with cheese, and bake uncovered for 10 more minutes
  • Serve Hot
    Garnish with fresh parsley if desired and serve warm with salad or bread.

Notes

  • You can prep and freeze stuffed peppers for future meals.
  • For low-carb, substitute cauliflower rice.
  • Add Worcestershire sauce or tomato paste to enhance flavor.
  • Leftovers reheat well in the microwave or oven.
