  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 bell peppers (red, green, yellow), diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup cooked rice (or uncooked added during simmering)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the ground beef and cook until browned, breaking it apart with a spoon.
  • Add diced onion and cook for about 3 minutes until softened.
  • Stir in the minced garlic and cook for another 30 seconds.
  • Add the diced bell peppers and cook for 5 minutes until slightly tender.
  • Pour in diced tomatoes, tomato sauce, and beef broth.
  • Stir in Worcestershire sauce, Italian seasoning, paprika, salt, and pepper.
  • Bring the soup to a gentle boil.
  • Reduce heat and simmer for 20 minutes.
  • Stir in cooked rice and simmer for another 5 minutes.
  • Taste and adjust seasoning if needed.
  • Serve hot and garnish with fresh parsley.
