- 1 large spaghetti squash
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup cooked chicken or ground turkey (optional)
- 1 cup baby spinach, chopped
- 1 cup cherry tomatoes, halved
- ½ cup mozzarella cheese
- 2 garlic cloves, minced
- Fresh basil for garnish
Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
Slice the squash in half lengthwise and scoop out the seeds.
Brush the insides with olive oil, sprinkle salt and pepper, and place face down on the tray.
Roast for 35–40 minutes until tender.
Meanwhile, sauté garlic and spinach in a skillet until fragrant. Add chicken, tomatoes, and Italian seasoning.
When squash is done, scrape the inside with a fork to create spaghetti-like strands.
Mix the filling with the strands and top with mozzarella and Parmesan cheese.
Return to the oven for 10 minutes until cheese melts and turns golden.
- You can make it vegetarian by omitting the meat and adding more vegetables.
