Ingredients
  

  • 1 large spaghetti squash
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked chicken or ground turkey (optional)
  • 1 cup baby spinach, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup mozzarella cheese
  • 2 garlic cloves, minced
  • Fresh basil for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  • Slice the squash in half lengthwise and scoop out the seeds.
  • Brush the insides with olive oil, sprinkle salt and pepper, and place face down on the tray.
  • Roast for 35–40 minutes until tender.
  • Meanwhile, sauté garlic and spinach in a skillet until fragrant. Add chicken, tomatoes, and Italian seasoning.
  • When squash is done, scrape the inside with a fork to create spaghetti-like strands.
  • Mix the filling with the strands and top with mozzarella and Parmesan cheese.
  • Return to the oven for 10 minutes until cheese melts and turns golden.

Notes

  • You can make it vegetarian by omitting the meat and adding more vegetables.
  • Use freshly grated cheese for richer flavor and better melt.
  • Choose medium-sized squash for even cooking and easy serving.
  • Sprinkle breadcrumbs on top for a crispy texture.
  • Serve directly in the squash shell for an attractive presentation.
