For the Zucchini

Stuffing
- 1 pound (450 g) lean ground beef, turkey, or chicken

- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup diced tomatoes
- ½ cup chopped bell peppers
- ½ cup chopped mushrooms
- 1 teaspoon Italian seasoning

- 1½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley

Cut the zucchini lengthwise and scoop out the flesh, leaving about a ¼-inch shell. Reserve the scooped flesh and chop it finely.
