Ingredients
  

  • 2 cups sugar snap peas, trimmed and thinly sliced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 cups mixed salad greens or baby spinach
  • ¼ cup red onion, thinly sliced
  • ¼ cup crumbled goat cheese or feta cheese (optional)
  • 2 tablespoons toasted almonds or walnuts (optional)

Instructions
 

  • Blanch sugar snap peas in boiling water for 1 minute, then transfer to ice water and drain well.
  • In a large bowl, combine salad greens, snap peas, berries, and red onion.
  • Whisk dressing ingredients together in a small bowl.
  • Drizzle dressing over the salad just before serving.
  • Toss gently and top with cheese and nuts if using.
