Ingredients
  

For the Crust

  • 1¼ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter (cubed)
  • 3–4 tablespoons ice water

For the Filling

  • 2 peaches (sliced)
  • 1 cup strawberries (halved)
  • 1 cup blueberries
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For Finishing

  • 1 beaten egg
  • 1 tablespoon coarse sugar
  • Optional vanilla ice cream or whipped cream

Instructions
 

  • Combine flour, sugar, and salt. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Wrap and refrigerate for at least 30 minutes.
  • Wash and slice all fruits. Toss with sugar, cornstarch, lemon juice, vanilla, and cinnamon. Let stand for 10 minutes.
  • Roll chilled dough into a 12-inch circle on parchment paper.
  • Place fruit mixture in the center, leaving a 2-inch border around the edges.
  • Fold the dough edges over the fruit, overlapping slightly while leaving the center exposed.
  • Brush the crust with beaten egg and sprinkle coarse sugar over the edges.
  • Bake at 400°F (200°C) for 35–40 minutes until the crust is golden brown and the fruit is bubbling.
  • Allow the galette to cool for 15 minutes before slicing. Serve warm with vanilla ice cream or whipped cream.
