Crack the eggs into a medium bowl.
Add the milk or cream, salt, and black pepper. Whisk until the yolks and whites are fully combined and the mixture looks slightly frothy.
Halve the cherry tomatoes and finely chop the red onion and garlic.
Keeping the vegetables relatively small helps them cook quickly and makes every bite balanced.
Heat a large nonstick skillet over medium heat.
Once the butter melts, add the red onion and bell pepper. Cook for approximately 2 minutes.
Add the zucchini and cook for another 2–3 minutes, stirring occasionally.
Add the halved cherry tomatoes and cook for another 1–2 minutes, just until they soften slightly.
Avoid cooking the tomatoes too long because they can release too much liquid.
Pour the beaten eggs over the vegetables.
Allow the eggs to sit undisturbed for about 10 seconds, then gently move them around the skillet with a spatula.
Continue folding and stirring the eggs slowly.
Remove the skillet from the heat while the eggs are still slightly glossy because they will continue cooking from residual heat.
Gently fold in the fresh basil and parsley.
Garnish with additional fresh herbs, freshly ground black pepper, and optional red pepper flakes.
Serve immediately with toasted bread, avocado, or a fresh green salad.
