- 2 lbs green peanuts or raw peanuts in shell
- 1/2 cup Cajun seasoning
- 1/4 cup salt (adjust to taste)
- 1 tablespoon red pepper flakes
- 1 tablespoon garlic powder
- 1 tablespoon garlic powder
- 2–4 fresh jalapeños, sliced
- 1 tablespoon onion powder
- 10 cups water (or enough to cover peanuts)
- 1–2 bay leaves
Rinse peanuts thoroughly to remove dirt and debris.
Place peanuts in a large pot or slow cooker.
Add Cajun seasoning, salt, red pepper flakes, garlic powder, and onion powder.
Add jalapeños, bay leaves, and optional hot sauce.
Pour in enough water to fully cover the peanuts.
Bring to a boil, then reduce heat and simmer for 4–6 hours.
Stir occasionally and add more water as needed.
Taste a peanut after 4 hours; continue cooking until tender and flavorful.
Let peanuts sit in the hot brine for extra spice (optional).
- Green peanuts cook faster and absorb seasoning better.
- Leaving peanuts in the hot brine intensifies the heat.
- Adjust salt depending on how salty you prefer the brine.
- Add Cajun seasoning gradually if unsure of spice level.
- Use a slow cooker for effortless, even cooking.
