- 1 cup tamarind pulp
- 1 cup seedless dates (chopped)
- 2 cups water
- ½ cup jaggery or sugar
- 1 tsp roasted cumin powder
- ½ tsp red chili powder
- ½ tsp black salt
- ½ tsp regular salt
- ½ tsp ginger powder (optional)
Add tamarind pulp, chopped dates, and water to a saucepan. Boil for 10–15 minutes until soft.
Allow the mixture to cool slightly and blend into a smooth paste.
Strain the mixture to remove fibers and seeds.
Return the mixture to the pan and add jaggery or sugar.
Add cumin powder, chili powder, black salt, and ginger powder.
Cook on low heat for 5–10 minutes until thick.
Let the sauce cool completely.
Store in a clean glass jar in the refrigerator.
