Ingredients
  

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying
  • 1/2 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp garlic, minced
  • 2 tsp sesame oil
  • 2 tbsp sesame seeds, toasted
  • Sliced green onions for garnish

Instructions
 

  • Prepare the Chicken:
    Season chicken pieces with salt and pepper. Dredge in flour, dip in beaten eggs, then coat with cornstarch.
  • Fry the Chicken:
    Heat oil in a deep skillet or wok over medium-high heat. Fry chicken until golden and crispy, about 4-5 minutes per batch. Drain on paper towels.
  • Make the Sauce:
    In a pan, combine sweet chili sauce, soy sauce, rice vinegar, honey, garlic, and sesame oil. Simmer for 2 minutes until slightly thickened.
  • Combine:
    Toss fried chicken in the sauce until fully coated.
  • Garnish and Serve:
    Sprinkle toasted sesame seeds and green onions on top. Serve hot with steamed rice or noodles.

Notes

  • Fry chicken in small batches for maximum crispiness.
  • Chicken thighs give juicier results than chicken breast.
  • For a lighter option, bake or air-fry instead of deep-frying.
  • Adjust the heat level by adding more or less sweet chili sauce.
