Ingredients
  

  • 2 cups raw pumpkin seeds, cleaned
  • 1 tablespoon olive oil
  • 1½ tablespoons brown sugar
  • 1 teaspoon curry powder
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt, or to taste
  • ⅛ teaspoon cayenne pepper, optional

Instructions
 

Clean the Pumpkin Seeds

  • Remove the seeds from a fresh pumpkin and separate them from the stringy pulp. Rinse the seeds thoroughly in a bowl of water, removing any remaining fibers. Drain well.

Dry the Seeds

  • Spread the cleaned seeds on a clean kitchen towel and pat them dry. Allow them to air-dry for 20–30 minutes if possible. Removing excess moisture helps the seeds roast evenly and become crisp.

Preheat the Oven

  • Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.

Prepare the Sweet Curry Seasoning

  • In a small bowl, combine the brown sugar, curry powder, turmeric, cumin, cinnamon, salt, and optional cayenne pepper. Mix thoroughly to distribute the spices evenly.

Arrange on the Baking Sheet

  • Spread the coated seeds in a single layer on the prepared baking sheet. Separate any large clusters so the seeds roast evenly. Avoid overcrowding the tray.

Roast Until Golden

  • Bake for 20–30 minutes, stirring every 8–10 minutes. Start checking after about 15 minutes because brown sugar can burn quickly. Remove the seeds when they smell toasted and look lightly golden.

Cool and Serve

  • Allow the seeds to cool completely on the baking sheet. They will become crunchier as they cool. Break apart any clusters and taste the seeds once cooled. Add a light sprinkle of curry powder if you want a stronger curry flavor.
    Serve immediately or store in an airtight container once completely cool.
