Ingredients
  

  • 1 cup mashed cooked sweet potatoes
  • 3 cups all-purpose flour (plus extra as needed)
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¼ cup warm milk
  • ¼ cup sugar
  • 1 egg
  • 4 tbsp butter, softened
  • ¼ cup warm water
  • Extra butter for brushing

Instructions
 

  • Combine warm water, yeast, and a pinch of sugar. Let sit 5 minutes until foamy.
  • Mix mashed sweet potatoes, warm milk, sugar, egg, butter, and salt.
  • Add yeast mixture and stir well.
  • Gradually add flour until a soft dough forms.
  • Knead for 6–8 minutes until smooth and elastic.
  • Punch down and divide into 12 equal pieces.
  • Place on a baking sheet, cover, and let rise 30–40 minutes.
  • Bake at 375°F (190°C) for 15–20 minutes until golden.
  • Brush with melted butter while still warm.

Notes

  • Use roasted sweet potatoes for richer flavour.
  • Add more flour only if the dough is too sticky.
  • Dough can be kneaded by hand or with a mixer.
  • Allow full rise for softer buns.
  • Cool completely before slicing for sandwiches.
