Ingredients
  

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter,
  • cold and cubed 3 to 4 tablespoons ice water
  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup evaporated milk
  • 1 unbaked pie crust

Instructions
 

  • Wash and peel the sweet potatoes.
  • Cut them into chunks and boil until fork-tender, typically for 15-20 minutes.
  • Drain the potatoes and mash them until smooth.
  • Allow them to cool before using them in your pie filling.
  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the mashed sweet potatoes, sugar, eggs, spices, and salt. Mix until well blended.
  • Stir in the evaporated milk and vanilla extract.
  • Pour the mixture into the unbaked pie crust.
  • Bake for 55-60 minutes or until a knife inserted into the center comes out clean.
  • Allow the pie to cool before serving.
