- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- ½ teaspoon paprika
- Salt and black pepper to taste
- 8 small corn or flour tortillas
- 1 cup shredded lettuce or cabbage
- ½ cup diced tomatoes or pico de gallo
- 1 avocado, sliced or mashed
Preheat the oven to 200°C (400°F).
Toss diced sweet potatoes with olive oil, chili powder, cumin, paprika, salt, and pepper.
Spread evenly on a baking tray and roast for 20–25 minutes, turning halfway, until tender and lightly crisp.
Warm the tortillas in a pan or oven.
Fill each tortilla with roasted sweet potatoes, lettuce, tomatoes, and avocado.
Garnish with cilantro and a squeeze of lime before serving.
