Ingredients
  

  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce or cabbage
  • ½ cup diced tomatoes or pico de gallo
  • 1 avocado, sliced or mashed

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Toss diced sweet potatoes with olive oil, chili powder, cumin, paprika, salt, and pepper.
  • Spread evenly on a baking tray and roast for 20–25 minutes, turning halfway, until tender and lightly crisp.
  • Warm the tortillas in a pan or oven.
  • Fill each tortilla with roasted sweet potatoes, lettuce, tomatoes, and avocado.
  • Garnish with cilantro and a squeeze of lime before serving.

  • Sweet potatoes can also be pan-roasted for a quicker method.
  • Corn tortillas keep the recipe gluten-free.
