Taco Bell’s Enchirito is a delicious fusion of a burrito and enchilada, featuring a soft tortilla filled with seasoned beef, beans, and onions, smothered in enchilada sauce and melted cheese. A nostalgic favorite that’s easy to recreate at home!

- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (16 oz) refried beans
- cup diced onions
- 6 large flour tortillas
- 1 can (10 oz) red enchilada sauce
- 1 ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ½ cup sliced black olives (optional)
- ½ cup sliced black olives (optional)
Preheat oven to 375°F (190°C).
In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
Add taco seasoning and follow package directions for preparation.
Warm refried beans in a separate pan or microwave until smooth and spreadable.
Lay out a tortilla and spread a layer of refried beans in the center.
Add a portion of seasoned beef and diced onions.
Roll up the tortilla, tucking in the sides, and place seam-side down in a baking dish.
Pour enchilada sauce over the rolled tortillas and top with shredded cheese.
Bake for 15-20 minutes, or until cheese is melted and bubbly.
Garnish with black olives if desired and serve hot.
