Ingredients
  

For the Carne Asada:

  • 1 ½ pounds skirt or flank steak
  • ¼ cup fresh lime juice
  • ¼ cup fresh orange juice
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Tacos:

  • 12 small corn tortillas
  • ½ cup finely diced white onion
  • ½ cup chopped fresh cilantro
  • Lime wedges
  • Salsa (optional)

Instructions
 

  • In a bowl, whisk together lime juice, orange juice, olive oil, garlic, cumin, chili powder, paprika, salt, and pepper.
  • Add chopped cilantro and mix well.
  • Place steak in a shallow dish or zip-top bag and pour marinade over it.
  • Refrigerate for 2–6 hours.
  • Preheat grill or cast-iron skillet to high heat.
  • Remove steak from marinade and grill 4–5 minutes per side for medium-rare.
  • Let rest 10 minutes, then slice thinly against the grain.
  • Warm tortillas on the grill or stovetop.
  • Fill tortillas with sliced steak and top with onion, cilantro, and lime juice.

  • Skirt steak is most traditional for authentic flavor.
  • Do not over-marinate beyond 8 hours.
