Ingredients
  

For the Tofu

  • 14 ounces firm tofu, pressed and cubed
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil

For the Soba and Vegetables

  • 8 ounces soba noodles
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

For the Tamarind Sauce

  • 2 tablespoons tamarind paste
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 2 tablespoons water

Instructions
 

  • Press tofu for 15 minutes and cut into bite-sized cubes.
  • Toss tofu with cornstarch until evenly coated.
  • Cook soba noodles according to package directions and drain.
  • Rinse noodles under cold water and set aside.
  • Whisk together tamarind paste, soy sauce, maple syrup, sesame oil, ginger, garlic, and water.
  • Heat oil in a large skillet over medium-high heat.
  • Cook tofu until golden and crispy on all sides.
  • Remove tofu and set aside.
  • Stir-fry bell pepper, carrot, broccoli, and snap peas until tender-crisp.
  • Return tofu to the skillet and add tamarind sauce.
  • Toss gently until everything is coated.
  • Add soba noodles and mix well.
  • Garnish with green onions and sesame seeds before serving.
