For the Carne Asada Marinade:
- 1 ½ pounds flank steak or skirt steak
- 1/4 cup fresh orange juice
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 2 tablespoons chopped fresh cilantro
For Serving:
- Small corn tortillas
- 1/2 cup white onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- Lime wedges
- Salsa roja or salsa verde
In a bowl, whisk together orange juice, lime juice, olive oil, garlic, cumin, chili powder, smoked paprika, salt, pepper, and cilantro.
Place steak in a shallow dish or resealable bag and pour marinade over it.
Marinate in the refrigerator for at least 1 hour (up to 4 hours for deeper flavor).
Preheat grill or cast-iron skillet to high heat.
Remove steak from marinade and grill for 3–5 minutes per side, depending on thickness, until medium-rare or desired doneness.
Let steak rest for 5–10 minutes before slicing.
Chop steak into small bite-sized pieces.
Warm tortillas on the grill or skillet.
Fill tortillas with carne asada and top with onion, cilantro, and a squeeze of lime.
- Skirt steak provides the most authentic flavour and texture.
- Do not over-marinate; citrus can toughen meat.
- Always slice steak against the grain.
- High heat creates the best char.
- Warm tortillas for better flavor and flexibility.
- Keep toppings simple for authentic style.
- Resting the meat keeps it juicy.
- Serve immediately for best taste.
