Ingredients
  

For the Pork

  • 1 kg boneless pork shoulder or pork belly, cut into medium cubes
  • 3 tablespoons vinegar
  • 1 tablespoon oil
  • 1 teaspoon salt

For the Vindaloo Spice Paste

  • 8–10 dried red chilies
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • ½ teaspoon black peppercorns
  • 4 cloves
  • 1-inch cinnamon stick
  • 3 green cardamom pods
  • ½ teaspoon mustard seeds
  • ½ teaspoon fenugreek seeds
  • 8 garlic cloves
  • 1½-inch piece fresh ginger
  • 2 tablespoons vinegar
  • 2–3 tablespoons water, as needed

For Cooking

  • 2 tablespoons vegetable oil
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, finely chopped, optional
  • ½ teaspoon turmeric powder
  • 1 tablespoon brown sugar or jaggery, optional
  • 1–1½ cups water
  • Salt, to taste
  • 1–2 tablespoons additional vinegar, according to taste

For Garnishing

  • Fresh coriander, optional
  • Thinly sliced green chilies, optional
  • Freshly chopped cilantro

Instructions
 

  • Cut the pork into evenly sized pieces. Trim excessive surface fat, but leave some fat because it helps keep the meat tender and flavorful during slow cooking.
    Pat the pork dry with paper towels.
  • Remove the stems from the dried red chilies.
    For a milder Vindaloo, remove some of the seeds. Soak the chilies in warm water for approximately 15–20 minutes.
    Lightly toast the coriander seeds, cumin seeds, black peppercorns, cloves, cinnamon, cardamom, mustard seeds, and fenugreek seeds in a dry pan until fragrant. Do not allow them to burn.
    Allow the spices to cool.
    Add the toasted spices, soaked chilies, garlic, ginger, and vinegar to a blender.
    Blend into a thick, smooth paste, adding a little water only when necessary.
  • Place the pork in a large bowl.
    Add the prepared Vindaloo paste, vinegar, and salt. Mix thoroughly until every piece is well coated.
    Cover and refrigerate for at least 6 hours, preferably overnight.
    Longer marination helps the spices penetrate the pork and develops a deeper flavor.
  • Heat oil in a large heavy-bottomed pot over medium heat.
    Add the chopped onions and cook until golden brown and softened.
    Take your time with this step because well-cooked onions provide a richer base.
  • Add the marinated pork along with any remaining marinade.
    Cook over medium heat for approximately 8–10 minutes, stirring occasionally, until the pork begins to brown and the spices become fragrant.
  • Add turmeric powder and optional chopped tomatoes.
    Cook for another 5 minutes until the tomatoes soften and blend into the masala.
  • Add approximately 1–1½ cups water.
    Bring the mixture to a gentle simmer. Cover the pot and cook over low heat for 1–1½ hours, or until the pork is tender.
    Stir occasionally and add a little more water if necessary.
  • When the pork is tender, taste the curry.
    Add additional vinegar for more tanginess and a small amount of jaggery or brown sugar if desired to balance the acidity and heat.
    Simmer uncovered for another 10–15 minutes until the gravy thickens.
  • Turn off the heat and allow the Vindaloo to rest for at least 10–15 minutes before serving.
    For even deeper flavor, prepare it a day ahead, refrigerate it properly, and gently reheat it before serving.
  • Garnish with fresh coriander if desired.
    Serve hot with steamed rice, Goan pao, crusty bread, naan, or another favorite accompaniment.

Notes

  • Pork shoulder is an excellent choice because it becomes tender during slow cooking.
  • Vinegar is an essential ingredient that gives Vindaloo its characteristic tang.
  • Use dried red chilies according to your preferred spice level.
  • Toast whole spices gently to enhance their aroma.
  • Marinating overnight produces deeper flavor.
  • Avoid adding excessive water because Vindaloo is traditionally relatively thick.
  • Adjust vinegar gradually because its strength varies between brands and varieties.
