Ingredients
  

For the Burgers

  • 1 pound ground beef (80/20)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 pepper jack cheese slices
  • 4 burger buns

For the Cajun Mayo

  • 1/2 cup mayonnaise
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon lime juice

Toppings

  • 4 lettuce leaves
  • 1 tomato, sliced
  • 1/2 red onion, sliced
  • 1 avocado, sliced
  • Pickled jalapeños (optional)

Instructions
 

  • Mix mayonnaise, Cajun seasoning, and lime juice in a small bowl. Refrigerate until ready to use.
  • Combine ground beef with chili powder, cumin, paprika, garlic powder, salt, and pepper. Form into four equal patties.
  • Grill or pan-cook over medium-high heat for 4 to 5 minutes per side.
  • Place pepper jack cheese on each patty during the final minute of cooking.
  • Lightly toast the burger buns until golden.
  • Spread Cajun mayo on both bun halves. Add lettuce, burger patty, tomato, onion, avocado, and jalapeños.
  • Serve immediately with fries, chips, or a fresh salad.
