- 1 lb (450 g) ground beef
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 garlic cloves, minced
- 1 cup uncooked long-grain rice
- 1 can (14.5 oz) diced tomatoes with juice
- 2 cup beef broth or water
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp teaspoon cayenne pepper (optional, for heat)
- Salt and black pepper, to taste
- 1/2 cup shredded cheddar cheese (optional, for garnish)
- Fresh cilantro, for garnish (optional)
In a large skillet or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the onion, green bell pepper, and garlic to the skillet. Sauté for 3-4 minutes until softened.
Stir in the uncooked rice, diced tomatoes, beef broth, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Mix well.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed.
Remove from heat and fluff the rice with a fork. If desired, sprinkle shredded cheddar cheese on top and cover for a few minutes to let it melt.
Garnish with fresh cilantro and serve hot.
