Ingredients
  

  • 1 lb (450 g) ground beef
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 garlic cloves, minced
  • 1 cup uncooked long-grain rice
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 cup beef broth or water
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • 1/2 cup shredded cheddar cheese (optional, for garnish)
  • Fresh cilantro, for garnish (optional)

Instructions
 

  • In a large skillet or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the onion, green bell pepper, and garlic to the skillet. Sauté for 3-4 minutes until softened.
  • Stir in the uncooked rice, diced tomatoes, beef broth, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Mix well.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed.
  • Remove from heat and fluff the rice with a fork. If desired, sprinkle shredded cheddar cheese on top and cover for a few minutes to let it melt.
  • Garnish with fresh cilantro and serve hot.

Notes

  • For added flavor, use fire-roasted diced tomatoes.
  • Adjust the spice level by increasing or decreasing the chili powder and cayenne pepper.
