Ingredients
  

For the Eggplant and Tofu

  • 2 large eggplants, cut into thick slices or chunks
  • 14 ounces firm tofu, pressed and cubed
  • 3 tablespoons vegetable oil
  • Salt, to taste
  • 1 teaspoon black pepper
  • 1 teaspoon chili flakes (optional)

Thai-Inspired Sauce

  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon lime juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar or palm sugar
  • 3 garlic cloves, minced
  • 1 teaspoon sesame oil

Garnish

  • Fresh Thai basil or regular basil
  • Fresh cilantro
  • Sliced red chili
  • Green onions
  • Crushed peanuts
  • Lime wedges

Instructions
 

  • Press tofu for 15–20 minutes to remove excess moisture, then cut into cubes.
  • Prepare the sauce by mixing soy sauce, lime juice, rice vinegar, sugar, chili sauce, garlic, ginger, and sesame oil in a bowl.
  • Brush eggplant pieces with oil and season lightly with salt and pepper.
  • Char the eggplant on a grill, grill pan, or oven at high heat until tender with smoky edges.
  • Heat oil in a pan and cook tofu cubes until golden and crispy on all sides.
  • Add the charred eggplant and tofu to a large pan.
  • Pour the Thai sauce over the vegetables and gently toss until everything is coated.
  • Cook for another 2–3 minutes to allow flavors to combine.
  • Garnish with fresh herbs, chili slices, peanuts, and lime wedges before serving.

  • Pressing tofu helps it become crispier when cooked.
  • Japanese or globe eggplant varieties work well.
