Ingredients
  

  • 1 lb pork shoulder or loin, cut into cubes
  • 2 tbsp red Thai curry paste
  • 1 can (14 oz) coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp vegetable oil
  • Fresh basil or cilantro for garnish
  • Steamed jasmine rice for serving

Instructions
 

  • Heat oil in a skillet over medium heat.
  • Add onion, garlic, and ginger, sauté until fragrant.
  • Stir in curry paste and cook for 1 minute.
  • Add pork cubes and cook until lightly browned.
  • Pour in coconut milk, fish sauce, soy sauce, and sugar.
  • Simmer for 25 minutes until pork is tender.
  • Add bell pepper and cook for 5 minutes.
  • Garnish with basil or cilantro and serve with rice.
