  • 8 oz (225g) rice noodles or rice vermicelli
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 2 green onions, sliced
  • ¼ cup fresh cilantro
  • ¼ cup fresh mint leaves

For the Thai Dressing

  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or palm sugar
  • 1 teaspoon sesame oil
  • 1 garlic clove, minced
  • 1 small red chili, finely chopped

Garnishes

  • Chopped roasted peanuts
  • Lime wedges
  • Sesame seeds

Instructions
 

  • Cook rice noodles according to package instructions. Drain and rinse with cold water.
  • Slice and prepare all vegetables and fresh herbs.
  • Whisk together lime juice, fish sauce, soy sauce, honey, sesame oil, garlic, and chili.
  • Place noodles, vegetables, and herbs in a large mixing bowl.
  • Pour the dressing over the salad and toss gently.
  • If desired, add cooked chicken, shrimp, or tofu.
  • Top with roasted peanuts, sesame seeds, and extra herbs.
  • Serve immediately with fresh lime wedges.
