Ingredients
  

For the Pasta Salad

  • 12 oz rotini, bowtie, or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, chopped
  • ½ cup red onion, finely sliced
  • ½ cup black olives, sliced
  • ¾ cup mozzarella pearls or cubed cheese
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil leaves, chopped

For the Dressing

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Cook pasta according to package instructions until al dente.
  • Drain and rinse pasta under cold water to stop cooking.
  • Place pasta in a large mixing bowl.
  • Add tomatoes, cucumber, bell peppers, onion, olives, cheese, parsley, and basil.
  • In a separate bowl, whisk together olive oil, vinegar, lemon juice, mustard, seasonings, salt, and pepper.
  • Pour dressing over the pasta mixture.
