Ingredients

Dry Ingredients

  • 1 cup (90 g) old-fashioned rolled oats
  • ¾ cup (95 g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup (113 g) unsalted butter, melted and slightly cooled
  • ½ cup (100 g) packed brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
Using parchment paper helps prevent sticking and makes it easier to remove the thin cookies without breaking them. Because these cookies spread during baking, prepare enough space on the trays to keep them from merging.
  • In a medium bowl, whisk together the all-purpose flour, rolled oats, baking soda, cinnamon, and salt.
Mix thoroughly to distribute the baking soda and cinnamon evenly. Set the bowl aside while preparing the wet ingredients.
  • In a large mixing bowl, combine the melted, slightly cooled butter, brown sugar, and granulated sugar.
Whisk until the mixture looks smooth and well blended. Using both sugars contributes to the flavor and texture: brown sugar adds caramel notes, while granulated sugar helps the cookies develop crisp edges.
  • Add the egg and vanilla extract to the butter-sugar mixture.
Whisk until everything is fully combined. The mixture should look smooth and slightly thick.
Make sure the melted butter is not hot when you add the egg, as excessive heat can partially cook it.
  • Gradually add the dry ingredients to the wet mixture. Stir until a uniform dough forms.
Fold in the raisins, distributing them evenly throughout the dough. If the mixture seems unusually dry, add a little milk, but avoid adding unnecessary liquid because a wetter dough may produce a different texture.
The dough should be soft and easy to scoop.
  • Scoop approximately 1 tablespoon of dough for each cookie and place the portions on the prepared baking sheets.
Leave about 3 inches between each portion because the cookies spread considerably. Gently flatten the dough portions with the back of a spoon to encourage an even, thin shape.
For consistent results, keep the portions similar in size.
  • Bake for approximately 10–14 minutes, checking frequently toward the end of the baking time.
The edges should become golden brown, and the centers should look set. For a crispier texture, allow the cookies to develop a deeper golden color without letting the edges burn.
If your oven heats unevenly, rotate the baking sheet halfway through baking.
  • Remove the cookies from the oven and let them rest on the baking sheet for 5 minutes.
They may appear slightly soft when first removed, but they will continue to firm up as they cool. Carefully transfer them to a wire rack and allow them to cool completely.
Avoid stacking the cookies while warm because trapped steam can soften their crispy texture.
  • Once completely cooled, serve the cookies with coffee, tea, milk, or your favorite dessert beverage.
For the best crunch, store them in an airtight container after they have cooled fully. These cookies are particularly delicious when the oats have developed a lightly toasted flavor and the raisins provide sweet bursts in every bite.

Notes

  • Choose old-fashioned rolled oats: They provide a classic oatmeal texture and toasted flavor.
  • Measure the flour accurately: Excess flour can make the cookies thicker and less crispy.
  • Use melted butter: It helps the dough spread and contributes to the thin cookie shape.
  • Space the dough portions apart: These cookies spread more than many traditional oatmeal cookies.
  • Watch the baking time: A minute or two can make a noticeable difference in crispness.
  • Cool completely: The cookies become crispier as they cool.
  • Avoid excess liquid: Too much milk may change the dough consistency and final texture.
  • Store only when cool: Warm cookies release steam that can soften the entire batch.
