Thin Mint Cookies

Shruthi
Thin Mint Cookies are crisp chocolate cookies with a refreshing peppermint flavor and a rich chocolate coating.
The dough combines cocoa powder, butter, sugar, flour, and a small amount of peppermint extract.
Rolling the dough thin helps create the signature crisp texture.
Each baked cookie is coated in melted chocolate for a smooth, glossy finish.
The cookies are perfect for parties, holiday gifts, afternoon treats, and dessert platters.
Serve them chilled or at room temperature with coffee, tea, or milk.

Ingredients

For the chocolate cookies

  • 1 cup (125 g) all-purpose flour
  • ¼ cup (25 g) unsweetened cocoa powder
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon peppermint extract
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

For the chocolate coating

  • 10 ounces (285 g) semisweet or dark chocolate, chopped
  • 1 teaspoon coconut oil or neutral vegetable oil, optional

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking tray with parchment paper.
Measure the ingredients and allow the butter to soften at room temperature. Prepare a clean work surface and a rolling pin for shaping the cookie dough.
  • In a medium bowl, whisk together the flour, cocoa powder, salt, and baking powder.
Mix thoroughly to distribute the cocoa powder evenly and break up any lumps. Set the bowl aside.
  • In a separate bowl, beat the softened butter and granulated sugar until the mixture becomes smooth and creamy.
Add the egg yolk, vanilla extract, and peppermint extract. Mix until well combined.
The peppermint should provide a gentle, refreshing flavor without overpowering the chocolate.
  • Gradually add the dry ingredients to the butter mixture. Stir until a firm chocolate dough forms.
If the dough appears slightly crumbly, gently press it together with your hands. Avoid adding unnecessary liquid, as a firm dough is easier to roll thinly and helps the cookies maintain their shape.
  • Shape the dough into a flat disc and wrap it in food-safe plastic wrap. Refrigerate for approximately 30 minutes.
Chilling firms the butter, making the dough easier to handle and reducing excessive spreading during baking.
  • Place the chilled dough between two sheets of parchment paper and roll it to approximately ⅛ inch (3 mm) thick.
Use a small round cookie cutter, approximately 1½–2 inches wide, to cut out the cookies.
Transfer the rounds to the prepared baking tray, leaving a little space between them. Gather the scraps, reroll gently, and cut additional cookies.
  • Bake for 8–10 minutes, checking carefully near the end of the baking time.
The cookies should look set and dry on the surface. Because the dough is dark, it may be difficult to judge browning by color alone.
Remove the tray from the oven and let the cookies rest for several minutes before transferring them to a wire rack. Allow them to cool completely; they will become crisper as they cool.
  • Place the chopped chocolate in a microwave-safe bowl. Heat in 20–30-second intervals, stirring between each interval until smooth.
Alternatively, melt the chocolate in a heatproof bowl set over a saucepan of gently simmering water.
If the chocolate is too thick for dipping, stir in the optional coconut oil a little at a time. Keep water away from the chocolate to prevent it from becoming grainy.
  • Dip each cooled cookie into the melted chocolate using a fork. Turn it gently to coat both sides completely.
Lift the cookie and allow the excess chocolate to drip back into the bowl. Place it on a parchment-lined tray.
Repeat with the remaining cookies, ensuring each one has an even coating.
  • Refrigerate the coated cookies for approximately 15–20 minutes, or until the chocolate has hardened.
Once set, transfer them to an airtight container. Enjoy the cookies immediately or store them for later.

Notes

  • Roll the dough thinly: Thin cookies develop the crisp texture associated with classic Thin Mints.
  • Use unsweetened cocoa powder: It provides a rich chocolate flavor without adding extra sugar.
  • Measure peppermint carefully: Too much peppermint extract can create an overpowering taste.
  • Chill before rolling: Cold dough is easier to cut and handle.
  • Cool completely before dipping: Warm cookies can cause the chocolate coating to melt unevenly.
  • Choose quality chocolate: Semisweet or dark chocolate complements the mint flavor.
  • Watch the baking time: Thin cookies can overbake quickly.
  • Allow enough setting time: The coating should harden completely before the cookies are stacked.
