Ingredients
  

Dry Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1/2 cups unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup pureed tomatoes (canned or fresh)
  • 1/2 cup buttermilk

Optional Toppings:

  • Powdered sugar for dusting
  • Whipped cream or ice cream

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a medium bowl, sift together flour, cocoa powder, baking soda, and salt.
  • In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

Incorporate Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the butter mixture, alternating with the pureed tomatoes and buttermilk. Begin and end with the dry ingredients. Mix until just combined.

Bake:

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

Cool and Serve:

  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Dust with powdered sugar or top with whipped cream before serving.

Notes

The pureed tomatoes may seem unconventional, but they enhance the cake's moisture and flavor without being detectable in the final taste.
