Ingredients
  

For the Sushi Rice

  • 2 cups sushi rice
  • 2¼ cups water
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • ¾ teaspoon salt

For the Shrimp Filling

  • 450 g cooked shrimp, peeled and finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce
  • 2 green onions, finely sliced
  • 1 teaspoon lime juice

For the Cups

  • 6 sheets nori
  • Cooking spray or a small amount of sesame oil

Toppings

  • 1 ripe avocado, diced
  • 1–2 tablespoons sesame seeds
  • Spicy mayonnaise
  • Sriracha
  • Furikake seasoning, optional
  • Pickled ginger
  • Wasabi

For Serving

  • Soy sauce
  • Spicy mayo
  • Lime wedges
  • Pickled ginger
  • Wasabi

Instructions
 

Cook the Sushi Rice

  • Rinse the sushi rice several times under cool water until the water becomes mostly clear.
    Drain well.
    Combine the rice and water in a rice cooker or saucepan.
    Cook according to the rice package instructions.
    Once cooked, let the rice rest for approximately 10 minutes.

Season the Rice

  • In a small bowl, combine rice vinegar, sugar, and salt.
    Stir until the sugar and salt dissolve.
    Transfer the warm rice to a large bowl.
    Gently fold the vinegar mixture into the rice using a wooden spoon or rice paddle.
    Avoid aggressively stirring because this can make the rice mushy.
    Allow the rice to cool slightly.

Prepare the Nori

  • Cut each nori sheet into approximately 4 equal squares.
    You should have about 24 pieces, allowing you to layer or reinforce the cups as desired.
    For standard muffin tins, one nori square per cup is usually sufficient.

Prepare the Shrimp

  • If using raw shrimp, cook it thoroughly first, then cool it.
    Chop the shrimp into small pieces.
    Place it in a bowl.
    Add mayonnaise, softened cream cheese, sriracha, soy sauce, sesame oil, green onions, and lime juice.
    Mix gently until creamy and evenly combined.

Prepare the Muffin Tin

  • Preheat the oven to 400°F (200°C).
    Lightly grease a standard 12-cup muffin tin.
    Press one square of nori into each muffin cup.
    Gently shape it around the sides.
    Do not worry if the edges fold or overlap slightly.

Add the Sushi Rice

  • Spoon approximately 2–3 tablespoons of seasoned sushi rice into each nori cup.
    Press the rice gently into the bottom.
    Do not pack it too tightly.

Add the Shrimp Mixture

  • Spoon approximately 1½–2 tablespoons of the creamy shrimp mixture over the rice.
    Spread gently so the shrimp filling covers most of the surface.

Bake

  • Place the muffin tin in the preheated oven.
    Bake for approximately 12–15 minutes, until the shrimp filling is hot and the edges of the nori become slightly crisp.
    For a more golden top, broil for approximately 1–2 minutes at the end, watching carefully.

Add Fresh Toppings

  • Remove the cups from the oven.
    Allow them to cool for approximately 3–5 minutes.
    Top with diced avocado, sliced green onions, sesame seeds, furikake, and a drizzle of spicy mayo.
    Add a small amount of sriracha for extra heat if desired.

Serve

  • Carefully remove each sushi bake cup from the muffin tin.
    Serve immediately with soy sauce, pickled ginger, and wasabi.

Notes

  • Use sushi rice: Its naturally sticky texture makes it easier to form the cups.
  • Cool the rice slightly: Very hot rice can make the nori soft before baking.
  • Cook shrimp thoroughly: If starting with raw shrimp, cook it before mixing into the filling.
  • Don't overfill: Too much filling can make the cups difficult to remove.
  • Use ripe avocado: It provides a creamy contrast to the warm shrimp filling.
  • Watch the broiler: Nori can burn quickly under high heat.
  • Serve fresh: The cups have the best texture immediately after baking.
