For the Mascarpone Cream
- 16 oz (450 g) mascarpone cheese, softened
- 1 cup heavy whipping cream
- ¾ cup granulated sugar
- 1 tsp vanilla extract
For the Coffee Layer
- 1½ cups strong brewed espresso or coffee, cooled
- 2 tbsp coffee liqueur (optional)
For Assembly
- 24–30 ladyfinger biscuits (Savoiardi)
- Unsweetened cocoa powder for dusting
- Dark chocolate shavings (optional)
Brew strong espresso or coffee and allow it to cool completely.If desired, stir in the coffee liqueur.
In a large bowl, beat heavy cream until stiff peaks form.In a separate bowl, mix mascarpone cheese, sugar, and vanilla extract until smooth
Gently fold the whipped cream into the mascarpone mixture until light and fluffy.
Quickly dip each ladyfinger into the cooled coffee mixture.Do not soak them for too long, as they can become soggy.
Arrange a single layer of coffee-soaked ladyfingers in the bottom of a 9×13-inch dish.
Spread half of the mascarpone mixture evenly over the ladyfingers.
Add another layer of dipped ladyfingers followed by the remaining mascarpone cream.
Cover and refrigerate for at least 6 hours or overnight.
Before serving, generously dust the top with cocoa powder.
Garnish with chocolate shavings if desired and serve chilled.
