Tirokafteri is a creamy and spicy Greek feta dip with roasted red peppers.It combines salty feta with sweet, smoky peppers and chili.Extra-virgin olive oil gives the dip a smooth Mediterranean richness.A little lemon juice adds freshness and balances the richness of the cheese.The dip can be made smooth or slightly chunky according to your preference.Serve it with warm pita, crusty bread, vegetables, or grilled foods.

Ingredients
  

  • 200 g feta cheese, preferably Greek feta
  • 1–2 small red chili peppers, adjusted to taste
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove
  • 1 tablespoon Greek yogurt, optional, for extra creaminess
  • ½ teaspoon dried oregano
  • Fresh parsley or oregano, for garnish

Instructions
 

  • Preheat the oven to 220°C (425°F). Place the red bell pepper on a baking tray and roast until the skin becomes blistered and slightly charred, turning occasionally for even roasting.
  • Remove the stem, seeds, and charred skin from the roasted pepper. Allow excess moisture to drain before adding it to the food processor.
  • Break the feta into small pieces. Using good-quality feta gives the dip its characteristic salty, tangy flavor.
  • Add the feta, roasted red pepper, chili peppers, garlic, lemon juice, olive oil, and oregano to a food processor.
  • For an especially creamy Tirokafteri, add a spoonful of Greek yogurt and blend briefly. If the dip seems too thick, add a small amount of olive oil.
  • Transfer the Tirokafteri to a serving bowl. Drizzle with a little extra-virgin olive oil and garnish with fresh parsley or oregano.
  • For the best flavor, refrigerate it for at least 30 minutes before serving.
