Ingredients
  

For the Tofu

  • 14 ounces (400 g) firm tofu
  • 1 tablespoon neutral cooking oil
  • 1 tablespoon sesame oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Vegetables

  • 2 cups thinly sliced cabbage
  • 1 small carrot, julienned
  • ½ medium onion, thinly sliced
  • 1 cup bean sprouts
  • 1 small green bell pepper, thinly sliced
  • 2 green onions, sliced

For the Egg

  • 2 large eggs
  • 1 tablespoon water
  • Pinch of salt

For the Seasoning

  • 2 tablespoons Japanese soy sauce
  • 1 tablespoon sake or water
  • 1 teaspoon mirin
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, finely minced
  • 1 teaspoon toasted sesame seeds

Instructions
 

Drain the Tofu

  • Remove the tofu from its package and drain the liquid.
    Wrap the tofu in clean paper towels or a kitchen towel.
    Place a light weight on top and allow the tofu to drain for approximately 10–15 minutes.
    Do not press it too aggressively because you want the tofu to retain enough moisture for a tender texture.

Cut the Tofu

  • Cut the drained tofu into bite-sized cubes or rough rectangular pieces.
    Try to keep the pieces relatively large so they do not break apart during stir-frying.

Prepare the Seasoning

  • In a small bowl, combine the soy sauce, sake or water, mirin, grated ginger, and minced garlic.
    Stir well and set aside.
    Having the seasoning ready before cooking makes the stir-frying process much easier.

Prepare the Eggs

  • Crack the eggs into a small bowl.
    Add the water and a small pinch of salt.
    Whisk lightly until combined.
    Do not overbeat the eggs.

Prepare the Vegetables

  • Slice the cabbage, carrot, onion, bell pepper, and green onions.
    If using bitter melon, remove the seeds and white inner portion, then slice it thinly.
    Keep the vegetables separated or arranged in the order they will be added to the pan.

Brown the Tofu

  • Heat a large skillet or wok over medium-high heat.
    Add the cooking oil and sesame oil.
    Carefully add the tofu pieces.
    Cook for approximately 5–7 minutes, turning occasionally, until the tofu develops lightly golden edges.
    Season with a small amount of salt and black pepper.

Add the Aromatics

  • Add the minced garlic and grated ginger to the vegetables.
    Stir-fry for approximately 30–60 seconds until fragrant.
    Be careful not to burn the garlic.

Return the Tofu

  • Add the browned tofu back into the skillet.
    Gently toss everything together.
    Avoid stirring too aggressively because the tofu can break apart.

Add the Egg

  • Push the tofu and vegetables toward the sides of the pan, creating a small space in the center.
    Pour the beaten eggs into the center.
    Allow the egg to cook for approximately 20–30 seconds before gently scrambling it.
    Once partially cooked, fold the egg into the tofu and vegetables.

Finish the Chanpuru

  • Add the sliced green onions and toasted sesame seeds.
    Taste and adjust the seasoning if necessary.
    For extra flavor, add a small amount of shichimi togarashi or bonito flakes.
    Serve immediately while hot.

Notes

  • Use firm tofu: Firm or extra-firm tofu holds its shape better during stir-frying.
  • Drain the tofu well: Removing excess moisture helps the tofu brown instead of steaming.
  • Do not overcrowd the pan: Too many ingredients at once can prevent proper browning.
  • Cook vegetables quickly: A short stir-fry keeps the vegetables colorful and slightly crisp.
  • Add bean sprouts late: This helps preserve their crunch.
  • Add egg near the end: This prevents the egg from becoming dry and overcooked.
  • Use moderate seasoning: Soy sauce adds plenty of salt and umami, so taste before adding extra salt.
  • Serve immediately: Chanpuru is best enjoyed hot and freshly prepared.
