Ingredients

For the Tofu

  • 1 block silken or soft tofu, approximately 300–350 g
  • 2 tablespoons Japanese soy sauce, or to taste
  • 1 teaspoon toasted sesame oil, optional

Traditional Toppings

  • 1 tablespoon freshly grated ginger
  • 2 green onions, finely sliced
  • 1 small handful katsuobushi (bonito flakes)
  • 1 teaspoon toasted sesame seeds

Instructions

Chill the Tofu

  • Keep the tofu refrigerated until you are ready to serve it.
Carefully remove the tofu from its package and drain the liquid.

Remove Excess Water

  • Place the tofu on a clean plate and gently pat the surface with paper towels.
Avoid pressing hard because silken tofu is extremely delicate and can easily break.

Cut the Tofu

  • Depending on how you want to present the dish, leave the tofu as one block or cut it into two to four portions.
For a traditional presentation, a larger piece of tofu is often placed in a small serving bowl or plate.

Add the Ginger

  • Finely grate fresh ginger.
Place a small mound of ginger directly on top of the chilled tofu.
Fresh ginger provides a bright, spicy contrast to the cool and creamy tofu.

Add Green Onions

  • Scatter finely sliced green onions over the tofu.
The green onions add freshness, mild sweetness, and a pleasant crunch.

Add Bonito Flakes

  • Sprinkle katsuobushi over the top.
The delicate bonito flakes add a distinctive smoky, savory umami flavor.

Add Soy Sauce

  • Drizzle soy sauce around the tofu or lightly over the toppings.
Avoid adding too much at once because tofu has a delicate flavor and can become overly salty.

Garnish and Serve

  • Finish with toasted sesame seeds and any optional toppings you enjoy.
Serve immediately while the tofu is cold.

Notes

  • Use silken tofu: Its soft, creamy texture is ideal for traditional Hiyayakko.
  • Keep the tofu cold: The refreshing temperature is an important part of the dish.
  • Handle gently: Silken tofu breaks easily, so transfer it carefully.
  • Use fresh ginger: Freshly grated ginger has a much brighter flavor than dried ginger.
  • Choose good soy sauce: Since there are so few ingredients, the flavor of the soy sauce matters.
  • Bonito flakes are optional: Omit them for a vegetarian version.
  • Add soy sauce just before serving: This helps prevent the tofu from becoming excessively salty or watery.
  • Serve immediately: Hiyayakko is best enjoyed fresh and chilled.
