Ingredients
  

For the Tofu

  • 14 ounces (400 g) silken or soft tofu
  • 2–3 tablespoons Japanese soy sauce

Traditional Toppings

  • 1 tablespoon freshly grated ginger
  • 2 green onions, finely sliced
  • 1–2 tablespoons bonito flakes
  • 1 teaspoon toasted sesame seeds, optional

Instructions
 

Choose the Tofu

  • Use silken or soft tofu for the most traditional delicate texture.
    Firm tofu can also be used if you prefer a slightly denser texture, but soft tofu provides the characteristic creamy consistency of Hiyayakko.

Drain the Tofu

  • Carefully remove the tofu from its package.
    Place it in a shallow dish or on a clean plate.
    Allow excess liquid to drain for approximately 5–10 minutes.
    There is no need to heavily press the tofu because the delicate texture is part of the appeal of this dish.

Chill the Tofu

  • Place the tofu in the refrigerator for approximately 20–30 minutes before serving.
    Cold tofu gives Hiyayakko its refreshing character.
    If your tofu is already refrigerated, you can skip this step.

Prepare the Ginger

  • Peel a small piece of fresh ginger.
    Grate it finely using a Japanese ginger grater or fine microplane.
    Fresh ginger provides a much brighter flavor than powdered ginger.

Prepare the Green Onions

  • Wash the green onions thoroughly.
    Trim the ends and slice them very thinly.
    For an attractive presentation, use mostly the green portion or a mixture of green and white sections.

Prepare the Other Toppings

  • Measure the bonito flakes and sesame seeds.
    If using shiso, chili, nori, or grated daikon, prepare them now.
    Keep the toppings separate until the tofu is ready to serve.

Cut the Tofu

  • Place the chilled tofu on a serving plate.
    Cut it into large cubes or rectangular blocks.
    You can also serve the tofu as one larger block for a traditional rustic presentation.
    Handle it gently because soft tofu breaks easily.

Add Soy Sauce

  • Drizzle a small amount of soy sauce over the tofu.
    You can also serve the soy sauce separately and allow each person to add it according to taste.
    Avoid adding too much soy sauce because it can overpower the delicate tofu.

Serve Immediately

  • Serve Hiyayakko while the tofu is cold and fresh.
    For the best texture, enjoy it shortly after adding the toppings and sauce.

Notes

  • Choose fresh tofu: Since tofu is the main ingredient, freshness makes a noticeable difference.
  • Keep it chilled: Hiyayakko is traditionally served cold and is especially refreshing when well chilled.
  • Do not press soft tofu heavily: Excessive pressing can destroy its delicate texture.
  • Use fresh ginger: Freshly grated ginger gives the dish its characteristic brightness.
  • Add soy sauce sparingly: Too much soy sauce can overwhelm the subtle tofu flavor.
  • Bonito flakes are optional: Omit them for a vegetarian or vegan version.
